Akagai in the US!

Akagai (赤貝 / Ark shell) is a classic Edomae-zushi neta, and pretty much impossible to get in the USA, so I was quite ecstatic to hear that my favorite sushi-ya in the US would have some for me to taste this Friday. 

As expected, the morsel was toothy, crunchy, sweet, and full of umami. A special treat indeed.

The himo (or mantle) was also served as another piece of nigiri, and it was fantastic as well - chewy (in a good way) and full of umami. One can only hope that this amazingly tasty shellfish will become available regularly at US sushiyas in the future. 

For now, I'm just very thankful that I was able to enjoy this great sushi-dane without traveling to Japan.
