A rather interesting looking animal, flying fish have elongated, wing-like pectoral fins that allow them to glide in the air for over a thousand feet. Not a traditional Edomae topping, tobiuo is nevertheless delicious and hence is occasionally found in good sushi shops. A fish that is best during the summer time, especially from May to July, when the delicate, soft texture and mild flavor is at its most refreshing.
